30-minute meal: Cheesy Spinach Rice & Grilled Chicken Breast

       Tonight's 30-min meal is going to be "Nice and Eaazzyyyy!" (in my Tina Turner voice). I have my cheese sauce already made, fresh spinach and some marinated sliced chicken breast that's thawing out and now all I
need to do is make some good ol' steamed rice and we ready to eat. I might even knock their socks off with a side salad and some bread lol!


Ingredients
  • Pre-made cheese sauce
  • Handful of fresh spinach
  • Seasoned sliced chicken breasts
  • 1-2 cups Uncooked rice
  1. Boil water in a medium saucepan and add salt and olive oil. When it starts to boil add in the uncooked rice and wait to bring it back to a boil. Once it starts to boil bring the fire to the lowest point and cover with top. Check after 10mins, when there is no more water turn off the heat but don't remove it from the stove. Allow the rice to steam in its heat for another 10mins or until you are ready to use it.
  2. While the rice is cooking simmer cheese sauce and add the spinach. Cook until spinach is done but try not to burn or overcook the sauce.
  3. Next heat up your skillet or stove top grill with olive oil. Once the pan is hot add the sliced chicken breast. Cook on first side until its only pink at the top but white around the edges then cook the other side for about 5mins or til done.
  4. Once rice is done steaming you can either
    • Add the sauce on top of your rice when you plate it
    • Mix the entire sauce on top of the rice itself in the pot 
Now plate it and enjoy!

Extras
You can add some grated cheese on top, a side salad, or some toasted garlic bread to the meal.
