Sweet and Sour Chicken
Last night I made some battered sweet and sour chicken with broccoli and white rice. This meal is so simple and with a couple of ingredients and about 45mins at the most you got a delicious meal.
Ingredients
- 1lb Chicken Breast Cubed
- 1 Head of Broccoli Steamed
- Cooked White Rice
- Oil for frying
Batter
- 1 cup flour
- 1 egg
- 1 tsp baking soda
- 1tsp salt
- pinch of pepper and chilli powder
Sauce
- 4Tbl Ketchup
- 1/2 can of Pineapples w 1/4 cup of the juice
- 3 tbsp Apple Cider Vinegar
- 4 tbsp Sugar
- 2 tbsp Cornflour
- 1 onion cubed
- 2 tbsp olive oil
1-Pre cook some plain white or brown rice and steam the broccoli.
2- In a small bowl mix all the ingredients for the batter together and add in the chicken breast.
3- Heat oil on high and drop them in until they are golden brown.then drain and take out.
4- In a deep skillet saute your onions with olive oil.
5- While onions are cooking, cut up half a can of pineapples into cubes and place them in a small bowl. Add the ketchup, vinegar, 1/4 cup of pineapple juice and sugar to the bowl and mix together.
6- Once onions are translucent add the cornflour and mix well. Slowly add the pineapple juice stirring constantly and then add sweet and sour sauce into the skillet until well combined.
7- Add in your chicken and steamed broccoli and cook for another 2-5mins.
Plate and have your family fall in love with you. It tastes better than your Chinese restaurants and you know its real chicken and not a dog or something lol! Add some spring rolls (recipe coming soon!) and its ON!
